    Pickled herring is sweet and vinegary but also fishy. The herring is a fat fish which goes well with the acidity of the vinegar.

    Pickled herring is not fermented and stinky in the same way Swedish surströmning is. You can smell the fish but not in an overpowering way.

    Pickled herring are made in several styles, the most common being "white herring" which is pickled with peppercorns and onions and "red herring" pickled with mace and other spices. Herring pickled in a curry dressing are also popular. Sometimes you also get herring that has been fried before being picked.

    It is normally eaten on black whole grain sourdough rye bread. Often it is topped with onions and capers or a mayonnaise-based curry salad.

    On festive occasions it is common to "give the herring something to swim in" and drink (many) shots of cold caraway aquavit with your herring.

      I visited Sweden once, and coming from Chicago (as an unironic Malort stan) I fell immediately in love with herring and aquavit.
