        Pickled herring is sweet and vinegary but also fishy. The herring is a fat fish which goes well with the acidity of the vinegar.

        Pickled herring is not fermented and stinky in the same way Swedish surströmning is. You can smell the fish but not in an overpowering way.

        Pickled herring are made in several styles, the most common being "white herring" which is pickled with peppercorns and onions and "red herring" pickled with mace and other spices. Herring pickled in a curry dressing are also popular. Sometimes you also get herring that has been fried before being picked.

        It is normally eaten on black whole grain sourdough rye bread. Often it is topped with onions and capers or a mayonnaise-based curry salad.

        On festive occasions it is common to "give the herring something to swim in" and drink (many) shots of cold caraway aquavit with your herring.

    People originating from cold and harsh temperate climates ate whatever they could get their hands on to keep starvation at bay. Fish was common in Scandinavia as most settlements are very close to the sea. Chicken and beef was rare, chickens were raised for eggs, cattle were raised for millk.

    Most people ate very little meat as meat was expensive. People also ate milk preserved as either cheese or butter but not as a staple as dairy was also scarce. Most people's diet consisted of rye bread, beer, barley porridge and cabbage. If you were lucky there would be a little bit of salt pork in the pot with the cabbage.

    The Sound used to be a rich fishing ground for herring so salt herring was plenty and cheaper than meat.

          Excluding Russia because they aren't always white, you'd be working with Norway, Sweden, Finland, and iceland. Considering some of those countries are a rounding error away from not existing, I don;t think they have a massive enough impact on the general european perception of winter. I could be wrong, so please correct me if I am.

            No, you'd also be working with Latvia, Lithuania, Estonia, Belarus, Germany, Denmark, Switzerland, Poland, Austria, Hungary, Czechia and more that I don't even care to name right now, all of which have numerous places which get as cold or much, much colder than Beijing. Hell, fucking Greece which is pretty much the warmest country in Europe has places which got almost as cold as the coldest it's even been in Beijing.

            EDIT: Hell, even Ljubljana which is a major city and qualifies as southern Europe has gotten to -25.4C, which is significantly colder than the coldest it's ever been in Beijing. Same with Sarajevo and Zagreb.

            EDIT 2: Ptolemaida which is in Greece (pretty much the warmest country in Europe) has gotten to -28C which is far colder than it has ever been in Beijing.
