It's definitely a toss up for me. I think at this point I've seen The Melancholy of Haruhi Suzumiya more than any other series. It's pretty much my go to series whenever I'm down. It has it's issues, but I really like the characters
I've also watched both Boogiepop series and Bloom Into You many times as well

I've watched Utena all the way through twice, and I've watched big chunks of it way more than that. Plus the movie several times. I've watched the last 15 episodes probably 5 times.
FMA:B is something I've watched twice and I've read the manga several more times. Same with Death Note, which I do generally watch til the end.
Nozaki-kun gas been mentioned, but I've watched it probably 5 times, just because I've gone 'I want to see the Tomoda episode. Now I want to see Wakamatsu again.' I've only intentionally watched it the whole way through once or twice, but I've seen every episode way more than that.
Probably Kill La Kill. That show and Gurren Lagann both have a lot of problems but they're also really fun and have layers, but I like KLK more.
I can't stop rewatching the old Gundam OVAs like 0083 and 08th MS Team, something abvout everything down to the stunning OPs just drags me back every time.
On the other hand, I've started and never finished The Big O more times than I can count, and I've watched the first episode of Haibane Renmei sixty thousand times, and not one second of the series beyond that.
Big O is definitely worth finishing.
Tell me about it! Every time I inevitably (re)pick it up I love the whole ride right up until fate throws me for a loop and I have to focus on something else and put it on hold. Repeat three more times. I have had more luck going slow and steady watching the OG sailor moon one ep a day.

Its Tomino at his absolute nuttiest and still manages to be one of his best shows.
I haven't seen those Gundam OVAs! I'll have to check them out. Gundam Wing was one of the first anime I got into when I was growing up (along with the rest of the Toonami block)

I tend to rewatch comedies more because they tend to not be too story dependent so spoilers don't matter much.
Youjo Senki probably 4 times total. I think very few anime ever got the giga brain MC trope correctly ever since Code Geass. Also the fact Aoi Yuuki just owns the show.
Gekkan Shoujo Nozaki-kun 2x+ just great, terrible shame there is no 2nd season. Main girl VA is one of my favorites too.
Joshikousei no Mudazukai 3 or 4x because it is realy fun, literally all explicitly built on tropes and they all work.
Asobi Asobase 2x pretty much takes the essence of how Japanese comedy and rumps up to 11. The problem is that everything is so memorable I don't see the urge to watch more, still great for what it is.
Sayonara Zetsubou Sensei/Arakawa under the bridge at least 5-6x though not everything at once. So many good timeless gags, explicit shitting on Japanese culture is a bonus, also pretty much Hiroshi Kamiya fan paradise for me.
Steins;Gate 2-3x there is a lot of detail for you to pick up.
Fate/Zero 2x+ by far the best fate, realy the only fate anyone needs to watch imo. The Gilgamesh vs Rider final scene is one of the greatest in anime ever, also Kiritsugu vs Kirei. And this is from someone who realy doesn't give a shit about the whole Fate franchise. I still absolutely hate the bullshit ending nonsense so skip that.
Gundam Wing for sure - having the series on a thumb drive means that whenever I don't have an internet connection for a period of time I inevitably watch it again.
That's one of the few that I've watched a couple times, it's weird because I've watched a bunch of other Gundam series and I get what people mean when they say that Wing is one of the lesser entries in the franchise, but it's the only one I go back to regularly whether that's listening to the OST or rewatching it.
Definitely - while Wing has purchase in my brain because of Toonami nostalgia, it is an admittedly weaker entry. But even knowing that it's just super re-watchable for me.

Also somewhat recently during the first wave of Covid lockdowns, once a month for 3 months in a row I rewatched the first 3 seasons of My Hero Academia. Not really sure why I did that
K-On!, Toradora! and Little Witch Academia are all comfort shows I'll throw on somewhat regularly when I'm in the mood as well as the first 30 or so episodes of Ranma ½ and some of the OVA's.
I love the Haruhi series and movie so much. Once I start it again, I end up binging it pretty quickly. Whenever I listen to the OST I can picture so many scenes vividly lol

Macross Plus, for the music, the great dub (Bryan Cranston as the protagonist), and the fact that it was one of the first anime I ever watched. Oh, and I fuckin love transforming robots.
Ninja Scroll, for literally being the first anime I ever watched. If anyone here remembers the premiere of the Teletoon and Space networks in Canada, they used to show anime on Friday/Saturday nights, and their selections, though limited, were surprisingly good. I caught NS while channel-surfing and literally went from zero to filthy, unapologetic otaku in 5 minutes.

I can basically just throw on any random episode of either series to just chill out / feel better
likewise with Ghibli stuff obviously, which I end up rewatching movies from almost every year
in terms of plot driven stuff probably Eva, Planetes, Stand Alone Complex, Legend of Galactic Heroes, and 3-gatsu
Used to watch the 1990 Moomin anime a fair bit as a child.
Otherwise it is probably watching Paranoia Agent, Black Lagoon and Samurai Champloo out of order on TV.
