I'm mostly going by the observation that white Americans with money in the past few decades really only defect to Russia, never Iran, Hong Kong/Macau, Vietnam
I'm sure many of those countries would love to take in some of the past American defectors for political gain or just to have their money pumped into their economy like a normal American immigrant
As mentioned Snowden initially leaked from Hong Kong and only ran away after it became likely the HK government would arrest him.
People already forgetting about Assange already? Dude spent years in "asylum" inside the Ecuadorian embassy and he is still fucked.
People don't flee to China because in the past it wasn't like China was an outright enemy of the US, if we are talking "decades" here. The current almost WW3 between China and US is something that started about 4 maybe 6 years ago not 20 or 30.

Snowden initially moved to Hong Kong, but didn't feel safe enough from the US to stay there IIRC.
I guess if you had to immigrate somewhere and it wasn't a country you fell in love with or really wanted to move to before, one where you look like the people around you would be preferable. Definitely not a deciding factor though

I have to wonder if Beijing would be willing to turn over a guy like Snowden in the modern day.
