The New Jedi Order era was the perfect setup to tell endless stories in the Star Wars universe. Luke is hosting a new academy at the old Yavin 4 base, and you have dozens or hundreds of people coming to Jedi temple, and they're all from different cultures. They're of all ages and races and alien species. Some of them bring their own culture's force tradition with them, while others got scouted by a Jedi that met them while they were doing a regular 9-5.

Infinite variety for galactic adventure right there, it plays into the "you too can be a Jedi" fantasy, and Disney's version of the Star Wars Universe doesn't have it. Low key that's why all of their shows have been prequels, because they left the Star Wars continuity in a really closed state after the last movie. They should either retcon the whole trilogy or do a big time skip to make the Jedi a diverse and interesting organization again, since that's such a huge pillar of the Star Wars universe.
