you can plant hella shit in just the most basic soil and it will be way better. water works for a couple of growth cycles but it loses most flavor and nutrients. It's good in a bind, but a little bit of soil goes a long way. Green onions also grow super fast, just keep them near light
I use water from my fish tanks on all of my plants. It's super nutrient-rich so I just replace it during my weekly water changes. Obviously you'd want to thoroughly wash anything off before eating it, but you can even grow a lot of crops directly out of the tank's filter.
