I'm reminded of how, in the early days of colonialism, it was believed that corn was incredibly bad for you and that it would turn you into a savage, and the only thing that broke people of this belief was enough of them being subjected to tough winters and being forced to eat it until their cognitive dissonance forced them to retroactively decide that they never believed in that silly superstition anyway.
Corn is super fucking bad for you though, when it was introduced to the Mississipian culture in the 700s they had a huge long term health decline until they got beans.
Corn needs to be chemically processed to be nutritional. Indigenous cultures learned this. People got really painfully sick on unprocessed corn.

No seriously MSG occurs naturally in a lot of stuff, like mushrooms. You're not going to get cancer or anything for putting a bit of it in your fried rice or anything. It's probably less harmful than salt. MSG is good folks.

And as other people pointed out, the sodium in it can dehydrate you, so wouldn't surprise me if that related to the headache stuff.
From the research I've seen, the headaches are because of the excess sodium, which is the same as with salt.
i eat salty shit constantly and don't get headaches, but there's certain fast food places i go to where i'll get a migraine from just a few bites, specifically kfc. it's not just salt.

I was just joking about scary chemical names. Glutamate is an amino acid which are molecules that combine to form proteins in our cells. Because amino acids are good for us our tongue tells us it tastes yummy. Sodium also tastes good to us which makes monosodium glutamate delicious.
