Liver is stupid good for you and super cheap, but liver and onions is icky
soak it in milk first, also chicken livers are way less earthy tasting than calf livers.
dirty rice is a good liver recipe; chilli would probably work well with like up to 50% liver.
Hi, I know this post is late but: Use a citrusy marinade, I like 1:1:2 lime/lemon/orange juice, garlic, and strong oily herbs like Mexican oregano+marjoram or rosemary/thyme/tarragon, plenty of salt, olive oil, and msg if you've got it. Dice them and let it soak 6-8hrs and cook it in cubes or drain and partially freeze, food processor with some other cheap meats that are more palatable.
Someone else suggested liverwurst but I find it works better with pork liver which is a bit harder to find. If you have the capability, I'd say try and make a riff on chorizo. Chicken liver paté is really delicious too, but I've found chicken hearts are a little cheaper and easier to come by and they make pretty bitchin' tacos.
Might I recommend a nice Chianti paired with some heirloom fava beans
