Per National Geographic data... Americans consume 3,641 calories a day while Cubans consume 3,279. That's a large difference, but it's driven by the fact that Americans overeat - Cuba's daily calories are in line with rich, capitalist countries that don't overeat, such as Spain (3,187), Australia (3,267), and Hong Kong (3,260). So in terms of total calories, Cubans are doing just fine. Not to mention with greater equality, I would imagine fewer Cubans go hungry than Americans do i.e. the average American calories have some fat tails.
Now breaking this down by food type, Americans consume more Sugars & Fats, Meat, and Dairy & Eggs while Cubans consume more Grains and Produce. We all know it's not like Americans are consuming a bunch of healthy fats, it's mostly garbage. And sugar is garbage. And the quality of meat that most Americans consume is questionable. Compare that to Cuba, which has a lot of sustainable agriculture and (as I understand it) they stay away from a lot of pesticides and GMO foods. I don't think it's a stretch to assume that Cubans on average probably eat healthier than the average American.

It's dairy and eggs combined, my hunch is that the Cuban diet probably has a decent amount of eggs but little dairy.
90% sure it's the other way round given daddy Castro's love of ice cream

But wasn't the point he struggled to find a cow with great milk production who could survive in the Cuban climate? That's why that one cow is enshrined?
I'd wager this is the case. Americans blow through ungodly amounts of milk and cheese daily.
