Thinking potatoes, jalepenos, sliced up tomatoes, anything else good? Trying to not have to spring for spendy meat substitutes. And ideally not too much effort to prepare haha.

    Textured vegetable protein (TVP). It's basically dried out little pieces of soy that resembles ground beef when you rehydrate it. Or soy curls, they're just a bigger version of TVP. You just have to soak it at least half an hour and you can flavor it however you want. I can find them both in my local stores and they're not that expensive

    Big chunks of portobello. Never buy the vegan egg substitute, it's hella expensive and disgusting.

    https://www.allrecipes.com/recipe/84043/vegan-bean-taco-filling/ I've been following this recipe. Nothing too surprising but the cornmeal makes it a bit more substantive. bell peppers and onions and salsa all seem to complement what you mentioned.
