Thinking potatoes, jalepenos, sliced up tomatoes, anything else good? Trying to not have to spring for spendy meat substitutes. And ideally not too much effort to prepare haha.
Don't know if it counts as spendy meat subsitute to you but I love some tofu scramble in my buritos.
Textured vegetable protein (TVP). It's basically dried out little pieces of soy that resembles ground beef when you rehydrate it. Or soy curls, they're just a bigger version of TVP. You just have to soak it at least half an hour and you can flavor it however you want. I can find them both in my local stores and they're not that expensive
And you can try some beans
Tomatoes are no bueno, too juicy. Maybe some sautéed mushrooms
All of those things are good yes, good idea. Honestly I just need to buy some of those in general.
Big chunks of portobello. Never buy the vegan egg substitute, it's hella expensive and disgusting.
Sounds great. I'd add some salsa, maybe some soy yoghurt, corn or beans
