It's something that originated with right-wingers. The pod hosts started saying it to make fun of them, and now it's just a part of Chapo vocabulary.
A few years ago, a bunch of right-wing media personalities (idk who in particular) started spreading this pseudoscience about how eating soy makes men produce less testosterone and more estrogen. So, according to these Proud Boys-adjacent right-wingers, "soyboys" are men who are effeminate, unmanly, etc. Not who they consider "alphas." That's how it started, at least.

They use it to refer to liberal-cringe, which is probably how the 4channers use it to. In that context, things like SNL's Mueller sketches are pretty soy.
I still read it as "unmanly", or "normie".
It's dumb, even ironically.
Soy is also used as an imitation for lots of meats/dairy, so the "fake but just as good" angle is important to consider for things like soyface which show exaggerated excitement. Anything which is derivative or corporate mass produced as a crowd pleaser, like baby yoda, would probably qualify as soy
