Fun fact tho: Japanese kewpie mayo uses only the yolks and apple code vinegar to make it a sweeter flavor. Its my favorite link

Never heard it with just whites but if you want it to keep from breaking (de-emulsified) you can use yolks and a bit of mustard helps.
