GURPS is legitimately good once you start actually playing, but there is an incredibly steep learning curve to figure out how to run a game, and there aren't many resources because the community is so tiny. Also Steve Jackson might be some weirdo libertarian so that's not great.

Also there are Too Many supplements so you really gotta lock down which ones your players can use

In my experience, you don't really have players trying to bring new books to the table, it's more that the GM has to set out what options are available beforehand (and that's part of the massive learning curve). Like, 99% of games won't even allow all of the Advantages/Disadvantages in the Basic Set, and those that do are probably just doing so for the novelty.

Apocalypse World. First of all, it's a good game on its own with excellent theming, progression, innovative mechanics, etc. Second, the mechanics were so interesting and struck a great balance of several "narrativist" trends in the indie tabletop rpg scene while still being a traditional, team-based rpg with a GM, that it inspired multiple prher designers to use the mechanics to build their own games, spawning dozens of great "Powered by the Apocalypse" games. They all share a very cinematic feeling with little in the way of "crunch" while still having ample opportunities to roll dice.

Deathwatch is a blast but I had such a hard time being the GM as I could never get combat difficulty right. It always felt like my players steam rolled encounters no matter what I did. All in all i give it 8/10.

Cyberpunk RED is the easiest to run game with that aesthetic that I have personally found since the Shadowrun IP holders started embezzling.
