Ideally we could relinquish some of our human cities back to the wild to create a sanctuary for them, but that's a wild ideal to imagine.

Same thing that happens to them now. They'll get slaughtered and eaten or milked until their so nutrient deficient that they need to be put down. The difference is, they won't be replaced with more.
