I dunno how those classes work in the US, but is there anything stopping people from attending? Like, I can't enroll in neurobiology classes at my uni but there's nothing stopping me from just showing up, listening and even participating. I just won't get credit for it.

Depends on the class. If you sit down in a big lecture hall I really doubt anyone would notice, maybe a TA. Smaller, high level courses tend to be a bit more tight knit so it probably won't work there.
Depends on the class and the school. At my college, if you didn't have a school badge on, you were asked to leave. When I was in community college, nobody gave a shit who you were or where you were
