I never really bought the narrative that Blazing Saddles killed Western flicks, it was already a played out genre that had mostly moved to lower budget TV production.
Spaghetti Westerns would likely still work decently, what people grew tired of was the hokeyness of western movies. The remakes of 3:10 to Yuma and True Grit are practically a spaghetti westerns and Django Unchained is a remake (or more of an homage I guess) of a spaghetti western.
