Definitely wish I was able to save up enough money to do a food truck. Its the only way I'd ever want to cook for a living anymore. Restaurants just abuse you and grind you down. I'd never be able to afford opening my own, but I feel like I could do a truck, I do know its still tough though. But my market has a huge hole in it for what I feel like I could bring that is interesting and profitable
Where I'm at we have basically no legit BBQ, haven't seen any trucks doing it either. I've got recipes I've perfected over time too that I just call grub, like jalapeño bacon mac and cheese lightly smoked, I also have other sides like stuffing(dressing) with some extra veg and stuff like breakfast sausage or honey ham. Just basically like comfort food in a sense, but just with a bit of my own style on jt.
that sounds awesome. maybe you could try a pop up, and see whether there's an audience for it / also start building a following? I keep seeing that couple on reddit in kitchen confidential who started a dumpling pop-up in Milwaukie last month and have sold out every weekend in less than 10 minutes.

Yeah that is a better idea to get it off the ground really, appreciate the suggestion, I look into if I can find something like that around here
