Can be multiple. In my case, I think my sister buying us volumes of Ranma 1/2, FLCL, and watching gurren lagann had the biggest impacts.

Later on in life but Gundam really resonated with me. I had been a fan of Wing as a child but that was because I loved the robots and big explosions. It wasn't until my late 20's I sat down and watched Gundam 1979 and it really opened my eyes to a whole other world of that franchise. I was pretty shocked how a show that should have been just a vehicle for selling toys had pretty good politics and a grounded, mature, take on war. The franchise is my favorite anime and it's cool how something people would write off as a Star Wars ripoff became like a cultural powerhouse with an actual Gundam being built in Japan.

Welcome to the NHK, a few years after I watched it I actually lived like a NEET for a while and thinking back to it gave me the perspective to help me cope with the situation

Digimon taught me that being terminally online is world saving praxis. I will totally make fun of the 'still waiting for my Hogwarts invitation' but deep deep down I'm waiting for my digi egg.

Medabots taught me how to be fucking awesome.

Nichijou taught me that it's okay to be a cake dispensing robot.

King of the Hill taught me the true power of friendship.

I'm guessing you're thinking Metabee, he's the main robot. It's a fun action show and the animation is really nice compared to most kids animes at the time but I think the biggest draw is that it's genuinely funny, not in an over the top way, but it's way more of a comedy than people seem to remember it being

    Tri-gun, anime.

Main protagonist is kinda godlike with enough power to destroy towns and crack open a moon but goes out of their way to not use that power even if using it would solve the "problem of the episode" quickly.

Seems like the main conflicts of the series were about Love/Hope vs Nihilism/Despair/Hate and Changing for the Better vs. Staying the same for the Worse.

I'm still breathing cause of Konosuba. It made me laugh when nothing else could. Honestly anime and manga really just help me through dark times in my life so much.

Having suffered depression, Evangelion really resonated with me. Right now, I'm really feeling Berserk. I really like Guts.
