Maybe I'm alone in this, because most people I ask tell me I'm crazy when I mention it, but celery has the strongest, most disgusting bitter flavour imaginable to me. And the smell is even worse. Celery ruins a good stew.
It's because it's lower calorie than crackers. It also has no/negligible carbs and a bit of fiber. Also you get to trick yourself into thinking because it's green and grown you're eating it with something healthy. It's also pretty neutral in taste and most crackers are salty. ...also a lot of people think it has negative calories.
What I'm saying is that you need ingredients to make food, and celery is a pretty great ingredient that's actually better than tumeric because you can eat it raw without vomiting.
All my pasta sauce and stew bases have celery in them. One batch can usually last 3 of us a few days.
Unironically, if you can fit something as nutritionally useless as celery into your budget you're into "decadence of seasoning" territory.

I get this too! Though it's not so bad if the celery is cooked, cooking it makes it tolerable. But raw celery is just disgusting to me.

Exactly, this is why I don't bother with any of the other ingredients when making curry and just eat spoonfuls of tumeric.
