Don't add sugar so I can use honey, syrup or jelly when wanting something sweet while still being able to use the cornbread in savory mode for chili.
This is a strong argument, but have you considered, making slightly sweetened cornbread then putting jelly on it anyway?
I'm a sugar hog, so I do what I can to curb my impulses. Also, jelly tastes better than "sweet" so I'd tend to go heavy on flavor and less on sweet.

Most cornbread I've had is complete garbage but when it's done right it's amazing. Source: texas
I've only made cornbread from scratch once, and it was trash. I'm sure there are better recipes out there, but I pretty much just stick to Jiffy--it's cheap and easy.
Your list does not include honey, and is therefore incorrect.
