If you grind the meat fine enough like you might do for making gyros, it comes out looking smooth like that.
I was gonna critique how they didn't bother to melt the cheese but decided it was pointless after looking at the picture for more than 5 seconds. I also wondered how do they even go about eating this and decided they just pick up big clumps of cheese and fry with their hands and shove it down the gullet
