I've used impossible burger before(but not for this) and it tastes close to real meat
tvp is probably the cheapest and best you're gonna find
proper vegan mince is pretty variable in quality. ranges from really good to terrible
seitan? I haven't made mapo with it but I've done bolognese before
where i live you can buy dried soy crumbles that's basically like ground beef after you season it properly
