Listen up you vegans, I know eating vegan is more expensive, takes more time, is incredibly unhealthy, and is complicated as hell. Unfortunately there is nothing we can do to change that

Did you know you can cook lentils in a rice cooker? Did you know you can cook lentils in a rice cooker at the same time as rice?
Ingredients
-1/3 Cup dry rice
-1/3 Cup Dry red split lentils
-1/2 cup of vegetable stock
-1 cup of water
Process
-
Put all ingredients in a rice cooker.

Press start
-
That's it
Obviously this could be done in a pot on a stove if you don't have a rice cooker, just follow your normal process for cooking rice. You can add some sauce for flavour at the end if you wish, hot sauce or sweet chili or something.
Prep time: Hours I assume
Cooking time: probably a couple days?
Nutrition: Like all vegan meals this has zero protein, and is lacking in many essential nutrients. High in inflammation and anti-nutrients
Cost: You are going to have to get a payday loan to afford the ingredients for this one folks. Thats is if you can even find these specialty ingredients in the food deserts we all live in
But for real, I get really fucking tired of this discourse.
"Veganism is more expensive/privileged" completely ignores the huge production cost of meat, from the plants and water used to feed the cows (pound per pound, beef is much more water-exhaustive than plants, and obviously many more pounds of plants go into the pounds of meat an animal "produces"), to the costs of clearing land/building factory farms, etc. The only reason meat and dairy are within the price point of a lot of people in the west is because they are massively subsidized--they have to be in order to be market viable since it's naturally an incredibly inefficient use of resources.
and if its so privileged to refrain from eating meat, its funny how meat consumption per capita is :always-the-same-map:

I'm planning another lentil curry for tomorrow night and I'm extremely excited. I just got a 25 lbs bag of Thai Jasmine rice that goes with it perfectly so I'm really looking forward to it.
I'm also curious if anyone has experience making their own tofu? Ideally from dried beans. The idea of food shortages in the future does have me a little spooked so having a bulk amount of dried goods that I can process into tasty things with great macros would be a wonderful way to alleviate that fear.
Can any Vegan athletes/body builders give me ideas for extremely lean proteins? If I am cutting/losing weight, a lot of macro calculators say I have to hit ~200g protein daily at ~2300 cals. And so far the main protein sources that make this semi-feasible are tofu, tempeh, and possibly supplementing with large relative quantities of nutritional yeast and spirulina. Do I just have to break down and buy a lot of vegan protein powders?
Yes buy vegan protein powder. The other recs are also good but if those are your macro targets protein powder will make it reasonable and feasible. 200g of protein is a lot btw you probably don't need that much.
You can buy unflavored pea Protein on the cheap and and just add coco powder for easy chocolate Protein
seitan seitan seitan. great macros (100g protein is approx 500 calories / 133g seitan), $1-2/lb if you make yourself.
