    He has reached the “high on their own farts” stage of the average YouTuber’s career. Shame, his recipes and non-podcast videos are interesting but outside of that he’s always had this “I need to have the last word on this” libertarian tech-bro defensive but combative vibe. I was pretty close to purchasing his branded knife, but I guess I’ll pass now.

      He's got subtitles on all his shit and generally does "regular kitchen" type recipes, or provides alternatives for how to do shit like that, so it sucks when he goes and says shit like this and makes me not wanna support his bullshit.

      Its absurd that food youtube doesnt have subtitles as a mandatory standard, half the fucking shit you do or use is called by its french name, so its bullshit to make people try and decipher the average youtube guy voice speaking french.

              In my case, the whole "let's be scientific and precise about cooking" current got old as soon as I started reading more and having more contact with food philosophy and politics, and seeing how food and taste are not just variables that need optimizing but meaningful actions in daily lives. It's also very toxic-masculine in tone, even if not in message.

                  To elaborate on what the other poster is saying, it depends on what type of rice and what you're doing with it. Some dishes you want a starchy, sticky rice that'll form into coherent clumps, but if you want the drier fluffier style of rice you'd likely get in a restaurant you want to rinse it a couple of times before cooking it. I just put it in a bowl, dump water on it, stir it, and drain it against my hand and repeat once, and that's worked well enough.

                      You just do it while the water's heating up instead of just standing around waiting, and it makes as big a difference to the end result as salting and adding some oil to the water does.

                        I make rice in a rice cooker, and i don't add salt or oil because the point of rice is to soak up flavor from what I'm actually cooking.

                  Hello, I am Chinese. Also a cook by profession.

                  The coating on white rice is excess starch. For paella and risotto, that is perfectly fine, if not outright beneficial.

                  For Asian cuisine, loose, fluffy rice is the norm. Think rice you would get at an Indian or Chinese restaurant.

                  Extra starch is also detrimental to frying. Fried rice in particular is generally made with thoroughly washed rice, cooked then slightly dried out. This form of loose rice has more surface area (as opposed to a clump of rice the same weight) for absorbing flavor. Unwashed rice with the exact same method will become gummy, and the starch kind of absorbs the frying oil and burns.

                  Sushi rice is also thoroughly washed, unwashed sushi rice will turn into gummy, chewy sushi.

        Its a burger and ice cream (frozen custard) place like Dairy Queen, except their burgers are actually good.

        They fry the burger in butter which sort of carmelizes the meat. The result is a slight crunch to the patty.

        The menu is also fairly large for a burger joint. Like you can get a fish fry or meatloaf dinner if you want to.

          The chicken is top notch. It's rare to even get better chicken from like a really good sit down restaurant. They have like fried chicken tenders and chicken sandwiches, regular or mildly spicy, even the grilled chicken is really juicy that they put on the sandwiches and salads. Oh the salads are bomb too.

        Burger joint with a few really good chicken options. The burgers are better than any other fast food place, and better than 90% of like, those sort of local specialty burger restaurants.

        The chicken is just really consistently done right, they have tenders and sandwiches, crispy/spicy/buffalo. Better than 90% of good, serious non-fast food restaurants in your area, and better than 100% of fast food places.

        Oh also the fish is so fucking good oh my god, rare to find better fried fish but if you get a fish platter don't take it to go, it's really delicate crispy beer batter that you don't want to steam in the box and get soggy.

        And they are famous for custard. It's really fucking good
